Barefoot Contessa

We had a great time cooking together yesterday, as usual. I think we were all overdue for some comfort food. Thanks for hosting, Janet!

I kept up the Barefoot Contessa theme for dinner tonight. I tried our her recipe for Pasta, Pesto and Peas and served it with some quick grilled chicken and cherry tomatoes.





I guess her 12-minute cooking time estimate would work if you bought pesto or already had it made beforehand, but this took me closer to an hour! It was delicious though, and we have plenty for leftovers this week.
